Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tbspĀ  lemon zest (about 1 medium lemon)
  • 1 tbspĀ  lemon juice

Instructions
 

  • Preheat your oven to 350F and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the flour, baking powder, baking soda, and salt.
  • In a separate bowl, beat the butter, sugar, egg, lemon zest, lemon juice, and vanilla extract together until well combined.
  • Add the wet ingredients to the dry ingredients and mix until a dough forms.
  • Use a cookie scoop or spoon to form the dough into 24 balls and place on the prepared baking sheet.
  • Bake for 12-15 minutes, or until the edges are golden brown.
  • Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
